Lets talk about how we can keep your car safe! Once you've found & restored a vehicle, the next thing to do is secure it. To do this, you want to go looting and find yourself a "Vehicle Locking System". It'll look like the photo below ↓
Once you've found this item, go sit in the driver seat of your vehicle.
Open your inventory, and right click on the locking system → choose the "use" option
This has now placed the locking system on your vehicle and will remain even through restarts. What you can do then is also take it up to the observatory and garage it in the spots available!
Keep in mind, that you can not garage a vehicle with items in the trunk, make sure you empty it out before trying to garage it.
